I think we are all pretty familiar with Jell-O shots, or at least you are if you went to college at a party school like I did. But I have never, not even once, heard mention of anything called a pudding shot in my life – until the other day.
See, I’ve recently become obsessed with Rumchata, which is a cream liqueur made from rum that tastes like cinnamon, sugar, vanilla deliciousness. It’s kind of like horchata, but better!!
I was searching Pinterest for drink recipes to use my Rumchata and I discovered the genius idea of spiking pudding with booze. Totally one of those things you wonder why you didn’t think of sooner, right?
Anyway, I had to make some.
The recipe I found only used the Rumchata in the pudding, but since I live on the edge and usually believe in the more is actually more theory, I decided to add some Kahlua to the mix too!
Boy am I glad I did, because the combination of the chocolate in the pudding with the coffee flavor of the Kahlua and the cinnamon/vanilla from the Rumchata tasted just like tiramisu.
Only this was better, because it was a dessert and a drink in one!!!
The perfect adult treat!
They were super easy to make, here’s what you need:
Spiked Pudding Ingredients:
1 cup milk
¾ cup Rumchata
¼ cup Kahlua
small package of instant chocolate pudding
1 small tub Cool Whip
Homemade Whip Cream (optional):
1 pint whipping cream
1/2 cup sugar
Whisk the milk, Rumchata, Kahlua, and instant pudding in a bowl until combined.
Add Cool Whip a little at a time and continue to whisk until smooth.
Once all the Cool Whip is added, spoon the mixture into shot glasses (or bowls if you want) and refrigerate.
After the pudding has set you can top with some homemade whip cream.
To make, simply add whipping cream to a stand mixer, add sugar, and turn to a medium high setting for about 5 minutes, or until stiff peaks form.
Serve and enjoy!!!
